- Level 1 Awards in Food Safety (NEW)
Rigorous enforcement of food hygiene legislation is important but
it is not, in itself, sufficient to prevent food poisoning. Food
poisoning is normally caused by negligence or ignorance and consequently
most experts in food hygiene believe that a reduction in the high
level of food poisoning cases will only be achieved by the education
of food handlers. The Chartered Institute of Environmental Health
has designed its Level 1 courses to give first tier workers an
appreciation of the fundamentals of good food hygiene practice.

- Level 2 Awards in Food Safety
The CIEH Level 2 Awards in Food Safety have been designed to address the food safety needs of the catering, manufacturing and retail sectors. they are designed for anyone working in a catering, manufacturing or retail setting where food is prepared, cooked and handled.

Both the Food Standards Agency and the 'Industry Guides to Good
Hygiene Practice' endorse refresher training. As such the CIEH recommend
refresher training every three years and has developed a new CIEH
Level 2 Award in Food Safety Update refresher qualification
to help food handlers update their knowledge and comply with best
practice in a cost-effective and efficient manner.
- Level 2 Award in Healthier Food and Special Diets
The CIEH has launched their Level 2 Award in Healthier Food and Special Diets, an accredited nutrition qualification in light of increased public interest in this area. Consumers have become increasingly aware of the effects of a poor diet and businesses are keen to understand the links between diet and health to meet changing customer demands.

- Level 3 Awards in Food Safety (NEW)
The Level 3 course is designed for those working in all
food businesses at supervisory level. This includes ‘traditional'
supervisors and team leaders, but also anyone who needs a broad
understanding of food hygiene as part of their work.

- Intermediate Certificate in Food Safety (Refresher)
This programme is designed for food safety supervisors. It will remind candidates how to supervise food safety to control contamination and safeguard the health of consumers. The programme will also update candidates on recent changes in food safety legislation.
- Level 3 Award in Implementing Food Safety Management Procedures
The CIEH Level 3 Award in Implementing Food Safety Management Procedures qualification examines HACCP and tools such as SFBB and will be invaluable for managers and proprietors of 400,000 small food businesses across the UK.
- Level 3 Award in HACCP for Food Manufacturing
The Level 3 Award in HACCP for Food Manufacturing is designed to ensure candidates develop the requisite knowledge and practical skills to implement a HACCP plan in their workplace. Candidates will be assessed by an assignment that requires the development of a HACCP plan.

Certificate in Hazard Analysis Principles and Practice
One of the main objectives of the Hazard
Analysis: Principles and Practice training programme is to assist
proprietors of food businesses to operate more safely and meet the
requirements of current legislation by introducing a rational and
realistic system of analysis. There are a number of basic steps
and principles involved in a hazard analysis system but no matter
how ‘simple' the system or the operations it may cover it can only
be effective if the personnel concerned:
- understand the principles
- have experience of the working environment or activity
- appreciate the need to develop realistic controls
- understand the importance of monitoring and periodic review
- HACCP
in Practice
This training programme has been designed for those working in the
food industry who have identified the need to apply the HACCP system
of food safety control to their particular business. The HACCP technique
is most applicable to manufacturing processes and those food operations
which have either a large scale dimension or, are comprised mainly
of repetitive, consistent products. However the training programme
will also be of use to many other food businesses which may be able
to apply the HACCP principles to a greater or lesser extent.
- LEVEL 4 CIEH COURSES
- Level 4 Awards in Food Safety
This qualification, which was introduced in 1984, has been regularly
reviewed and modified to meet the food industry's need for a high
level practical training programme with external accreditation.
The training programme is delivered by registered centres and tutors
and consists of at least 36 hours of teaching time, typically over
5 or more days. Some courses are delivered in consecutive days,
often residentially – these ‘intensive‘ courses have special examination
requirements to maintain the quality of the learning experience.

in Health & Safety in the Workplace
This training programme has been designed to provide essential knowledge
and understanding of health and safety for employees working in any
sector of business, whether manufacturing, commerce, public sector
or the service industries. Good health and safety standards rely on

accidents and ill health arising from work activities.

programme provides an opportunity to look more deeply into general
health and safety from a supervisory perspective, and successful candidates
will be able to help their organization whatever the size or activity
in improving the health and safety culture.

The
CIEH Advanced Certificate in Health & Safety in the Workplace
is designed for those working in any business regardless of their
product or service range. It is essential for all those who have an
employment role that includes a responsibility for the management
of health and safety issues. It is also an appropriate technical qualification
for those wishing to apply to offer level 1 training. The programme
covers a defined syllabus requiring a minimum of 40 hours tuition
time and students are assessed on their performance in a 3 hour examination
representing 60% of the final grade and two course assignments representing
the remaining 40%.

This course develops knowledge and understanding of the key concepts involved in environmental awareness for all employees.
- Environmental Management Certificate
This helps middle managers and supervisors to identify and manage environmental effects.
- Professional
Trainers Certificate
The qualification has been developed as a successor to the CIEH
Group Training Certificate, which since 1995 has been the benchmark
trainer skills qualification for CIEH registered tutors. This replacement
qualification extends the content of basic training techniques by
encouraging a dynamic and flexible approach to training delivery,
taking into account some of the recent advances in accelerated learning
and Neurolinguistic Programming (NLP). However, it is still founded
on a basic short-course training programme that can typically be
delivered in three days, with an assessment based on delivery of
a short training session at the conclusion of the programme.
