Foundation Certificate in Food Hygiene (Hygiene Training Scheme)
- This is the flagship course and meets the requirement of food hygiene regulations for the basic level of hygiene training demanded for staff directly involved in the handling of food. The flexible approach ensures the basic principles are covered while allowing you to incorporate material from your own HACCP system.
The course is presented by a SOFHT Authorised Trainer and a register of names is held by the Society. Alternatively, companies may apply for authorisation of their own trainers
The SOFHT Hygiene Training Scheme is delivered by a SOFHT Authorised Trainer and comprises 5 modules:
- Module 1 Introduction; legislation; food handlers' legal responsibilities.
- Module 2 Non microbial contamination; control of pests; foreign matter and chemicals.
- Module 3 Microbial contamination; simple microbiology; food spoilage; temperature control; shelf life; food infection; food poisoning.
- Module 4 Cross contamination; plant and equipment cleaning and disinfection; personal hygiene
- Module 5 Use HACCP principles to relate food hygiene to your own workplace.

By January all food and drink businesses must operate a food safety management system based on Hazard Analysis Critical Control Points (HACCP). Until now this has only been a legal requirement for certain food businesses, such as those in the meat processing industries.
The course covers five modules:
- What is HACCP?,
- Why HACCP is needed,
- Benefits of HACCP
- The 7 Codex Principles of HACCP and
- Maintenance of a HACCP system.
