Level 1 RIPH Courses -
First Certificate in Food Safety

This level 1 qualification is designed principally for those who are, or intend to be, food handlers. A food handler is any person, in any type of food business, who handles food, whether open or packaged (food includes drinks and ice). This qualification may also be appropriate for people whose work requires them to enter food premises, e.g. equipment maintenance engineers, off-site business owners/managers and delivery personnel. The aim of this qualification is to provide a basic knowledge of food hygiene.
Holders of this qualification will have knowledge and understanding of the importance of food hygiene, associated food hazards, good hygiene practice and controls based upon an awareness of food safety management systems. This is important to understanding and maintaining good practice in the handling, processing and preparation of safe food.

2 RIPH Courses -
Intermediate Certificate in Food Safety
This Level 2 qualification is designed principally for those who
are, or intend to be, supervisors and potential managers of food handlers.
The Outcomes have been designed to ensure that supervisors and potential
managers are aware that, in addition to traditional hygienic practices,
they should seek to identify and prevent food safety hazards at all
stages in food production, preparation and service, thus enabling
them, and the staff they manage, to operate in a safe, hygienic and
efficient manner. The aim of the RIPH Intermediate Certificate in
Food Safety is to provide a broad knowledge and understanding of food
safety principles and practices.
Holders of this qualification will have a knowledge and understanding
of the importance of producing safe food through the identification
of food safety hazards, control and monitoring procedures and appropriate
corrective actions, thus contributing to and encouraging improvements
in food safety practice.
Intermediate
Certificate in HACCP Principles and their application in Food Safety
This qualification is set at Level 2 as indicated in the UK Industry
Guides to Good Hygiene Practice. It is intended for all those involved
in the implementation of modern food safety management systems and
is specifically designed for HACCP team members as well as supervisors
and managers in all aspects of the food industry.

3 RIPH Courses -
Advanced Diploma in Food Hygiene and Safety
This Level 3 qualification is designed principally for those who
are senior staff and managers of food handlers in a food business.
The Outcomes have been designed to ensure that supervisors and potential
managers are aware that, in addition to traditional hygienic practices,
they should seek to identify and prevent food safety hazards at all
stages in food production, preparation and service, thus enabling
them, and the staff they manage, to operate in a safe, hygienic and
efficient manner. The aim of this qualification is to provide an in-depth
knowledge and understanding of food safety and the application of
food safety management systems.
This qualification provides supervisors and managers of food handlers
with an advanced knowledge and understanding of how to manage food
safety within a food business, how to control hazards and the legal
responsibilities of food businesses. It emphasises a preemptive HACCP
approach to food safety management and meeting legal obligations.
Advanced
Diploma in HACCP Principles and their application in food safety
This qualification is set at Level 3 as indicated in the UK Industry
Guides to Good Hygiene Practice. It is intended for all those involved
in the implementation of modern food hygiene management systems and
is specifically designed for HACCP team leaders as well as supervisors
